Chicken Fajitas

Chicken Fajitas

Ingredients
3/4 pound boneless chicken breast - cut into strips
1 tablespoon vegetable oil
2 cloves garlic - minced
1/8 cup lime juice
1/4 teaspoon chili powder
1/2 teaspoon oregano
1/4 teaspoon thyme
1/2 teaspoon cumin
1/4 teaspoon pepper
3/4 cup red onion - sliced
1 red bell pepper - cut into strips
8 flour tortillas
1 cup chopped cilantro
salsa of your choice

Directions

  1. In a large skillet heat oil over high heat.
  2. Add garlic and chicken. Saute for 2-3 minutes for chicken to brown.
  3. Add lime juice, spices, onion and red pepper. Cook for 2-3 minutes on medium heat, stirring constantly.
  4. Lower heat and cover to keep warm.
  5. Place meat and veggie mixture into tortillas with cilantro and salsa.

Freezer Friendly tip- Go ahead and just double the recipe and after cooking put the chicken and veggies in the freezer. Defrost in the refrigerator and then throw in the skillet to heat it up.
