Chicken Quesadillas

What am I having for dinner tonight?
Chicken Quesadilla
Mexican Rice
Corn (Mexican)

Ingredients
2 chicken breasts
1/2 pound Monterrey Jack Cheese Shredded
8 Burrito Size Flour Tortillas
1 Jar of your favorite salsa
8 ounces Sour Cream
Non-stick spray

Directions

  1. Chop chicken breast into bite sized pieces. Cook in small non-stick sauce pan with about a half a cup of salsa.
  2. Heat large frying pan over medium heat.
  3. Place 1 flour tortilla on microwave safe plate. Sprinkle about 1/8 the cheese on tortilla followed by 1/4 the prepared chicken and another 1/8 cheese. Place second flour tortilla on top.
  4. Put quesadilla in microwave for 30 seconds on high to melt cheese.
  5. Spray frying pan with non-stick spray and place quesadilla on to cook. When lightly browned and crisp turn to cook other side.
  6. Repeat 3 - 5 until 4 quesadillas have been made.
  7. Using a pizza cutter cut into 6 pieces
  8. Serve with salsa and sour cream.

I make my own Mexican rice by adding salsa to regular rice.
