Stir Fry Beef and Pasta
Fruit Salad
Ingredients
8 ounces Spaghetti - uncooked
4 tablespoons corn starch - divided
1/3 cup plus 1 tablespoon Soy Sauce
1-2 cloves garlic - pressed
1/2 teaspoon ground ginger
1/4 teaspoon pepper
12 ounces boneless beef round steak - cut into thin strips
2 cups cold water
2 1/2 tablespoons vegetable oil - divided
2 carrots - thinly sliced
1 large onion - cut into chucks
1 10 ounce package frozen cut green beans - thawed and drained
Directions
- Put large pot of water on to boil for the pasta
- In a small bowl blend 1 tablespoon each of cornstarch and soy sauce.
- Add ginger and pepper and beef.
- Marinate if for 30 minutes.
- In another small bowl, blend the remaining 3 tablespoons of cornstarch into water.
- Stir in remaining 1/3 cup of soy sauce and set aside.
- Prepare pasta according to the package directions, drain.
- Add 1 teaspoon of oil to the pasta and toss to coat.
- In a medium skillet heat 1 tablespoon of oil.
- Add meat mixture and stir fry for 1 minute.
- Remove meat mixture from heat and set aside.
- In same skillet, heat remaining 1 tablespoon oil.
- Add carrots and onion and stir-fry until tender-crisp.
- Stir in meat, cornstarch/soy sauce mixture and green beens.
- Cook, stirring constantly, until mixture is thickened.
- Arrange hot pasta on plate and top with meat mixture.
