Turkey Marsala

What am I having for dinner Saturday Night?
Turkey Marsala
Potato
Green Beans

I am posting this early as I have a very busy day Saturday and don't want you to miss out on the post.

Ingredients
4-6 turkey breast cutlets (or chicken breast)
3 tablespoons olive oil - divided
12 ounces mushrooms sliced
1 1/2 cups sliced onion
3/4 cup white wine or sherry (I use cooking)
1 tablespoon balsamic vinegar
1 1/2 tablespoons chopped parsley (fresh)

Directions

  1. Heat 1 tablespoon of the olive oil in a large skillet over high heat until hot; add turkey.
  2. Cook 1 to 2 minutes each side; remove from skillet and keep warm.
  3. Add remaining oil, mushrooms and onions to skillet; cook and stir 5 minutes.
  4. Reduce heat to low; add wine, vinegar and simmer uncovered 2 minutes.
  5. Return cutlets to skillet, coat with sauce; sprinkle with parsley.
