White Turkey Chili

White Turkey Chili

Ingredients
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, pressed
1 pound ground turkey
Salt and Pepper to taste
1 can cannellini beans, drained
1 can corn with red and green peppers, drained
1 16-ounce jar salsa
1 15-ounce can tomatoes with garlic and onion

Directions

  1. In a skillet or dutch oven, heat olive oil over medium-high heat.
  2. Add onion and garlic and cook till translucent.
  3. Add turkey and brown, salting and peppering to taste.
  4. Drain, then blot meat with paper towels to absorb excess grease.
  5. Add the rest of the ingredients and heat till bubbly and completely heated through.

I like this recipe for the weekend because with busy schedules or lazy ones where everyone has their own schedule everyone can help themselves when they are ready to eat.

After browning meat try putting it in a slow cooker on low. (Do this in the morning.) You can have it for lunch or dinner.
