Black Pepper Steaks

Ingredients
1/2 cup Olive Oil
4 small to medium T-bone steaks
4 tablespoons ground black pepper
1 small onion
2 teaspoons parsley
1 tablespoon dry mustard powder
2 tablespoons thyme
1 cup chicken broth
3/4 cup heavy cream

Directions

  1. Preheat skillet with 4 tablespoons olive oil over medium-high heat.
  2. Season both sides of the steaks with salt.
  3. Press about 1/2 tablespoon of freshly ground black pepper evenly on each side of the steaks.
  4. Cook steaks in skillet for 6 to 7 minutes on each side for medium doneness.
  5. Remove steaks from skillet and keep warm. (Reserve drippings)
  6. Add the 2 tablespoons of olive oil to the skillet that held the steaks.
  7. Add the onion, the mustard, and thyme and cook for 1 to 2 minutes, stirring frequently.
  8. Add Chicken broth and heavy cream, raise the heat to high, and cook for 3 minutes or until the sauce is slightly thickened.
  9. Finish sauce with the chopped parsley.
