Chicken and Broccoli Lo Mein

What am I having for dinner?
Chicken and Broccoli Lo Mein

Ingredients
Salt for cooking the pasta
8 ounces linguine
2/3 pound skinless, boneless chicken breast halves, cut into bite sized pieces
1 cup fresh button mushrooms, sliced
1 tablespoon vegetable oil
1 large onion, chopped
16 oz frozen broccoli pieces
3 cloves fresh garlic, minced
1 teaspoon ginger
3 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon ketchup
1 teaspoon sesame oil

Directions

  1. Bring water to cook linguine to boil. Salt lightly, cook until just tender.
  2. Heat vegetable oil in skillet over medium heat.
  3. Add onion and chicken (cut into bite sized pieces), cook 2 minutes
  4. Add mushroom, broccoli, garlic, and ginger to the skillet. Stir frequently, until the mushrooms release their liquid and the chicken is no longer pink in the center.
  5. Add the soy sauce, vinegar, ketchup, and sesame oil to the skillet. Stir well to blend.
  6. Remove skillet from heat when heated through.
  7. Add drained pasta to skillet and stir to coat pasta.
