What am I having for dinner?
Chicken and Broccoli Lo Mein
Ingredients
Salt for cooking the pasta
8 ounces linguine
2/3 pound skinless, boneless chicken breast halves, cut into bite sized pieces
1 cup fresh button mushrooms, sliced
1 tablespoon vegetable oil
1 large onion, chopped
16 oz frozen broccoli pieces
3 cloves fresh garlic, minced
1 teaspoon ginger
3 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon ketchup
1 teaspoon sesame oil
Directions
- Bring water to cook linguine to boil. Salt lightly, cook until just tender.
- Heat vegetable oil in skillet over medium heat.
- Add onion and chicken (cut into bite sized pieces), cook 2 minutes
- Add mushroom, broccoli, garlic, and ginger to the skillet. Stir frequently, until the mushrooms release their liquid and the chicken is no longer pink in the center.
- Add the soy sauce, vinegar, ketchup, and sesame oil to the skillet. Stir well to blend.
- Remove skillet from heat when heated through.
- Add drained pasta to skillet and stir to coat pasta.
