What am I having for dinner tonight?

Ingredients
4 boneless skinless chicken breast halves
Salt and Pepper to taste
2 tablespoons flour
1 tablespoon Olive Oil
2/3 cup balsamic vinegar
2/3 cup chicken broth
1 teaspoon thyme
Directions
- On a dinner plate, place flour and salt and pepper.
- Dredge chicken and tap any excess flour off.
- In a skillet, heat the oil over medium high heat.
- Add chicken and brown quickly on both sides, about 2 minutes per side.
- Add the vinegar and bring to a boil.
- Reduce the heat and let smmer until the vinegar is reduced by about two-thirds.
- Add the chicken broth and continue to simmer until the chicken is tender and fully cooked, about 10 minutes.
- Remove the chicken and keep warm.
- Add the thyme and keep the sauce boiling until it's reduced some more, about another 10 minutes.
- Serve with sauce spooned over the top.
Prep for tomorrow, tonight: We are having spaghetti tomorrow so no prep necessary.
