Chicken Balsamic

What am I having for dinner tonight?
Chicken Balsamic
Broccoli
Corn

Ingredients
4 boneless skinless chicken breast halves
Salt and Pepper to taste
2 tablespoons flour
1 tablespoon Olive Oil
2/3 cup balsamic vinegar
2/3 cup chicken broth
1 teaspoon thyme

Directions

  1. On a dinner plate, place flour and salt and pepper.
  2. Dredge chicken and tap any excess flour off.
  3. In a skillet, heat the oil over medium high heat.
  4. Add chicken and brown quickly on both sides, about 2 minutes per side.
  5. Add the vinegar and bring to a boil.
  6. Reduce the heat and let smmer until the vinegar is reduced by about two-thirds.
  7. Add the chicken broth and continue to simmer until the chicken is tender and fully cooked, about 10 minutes.
  8. Remove the chicken and keep warm.
  9. Add the thyme and keep the sauce boiling until it's reduced some more, about another 10 minutes.
  10. Serve with sauce spooned over the top.

Prep for tomorrow, tonight: We are having spaghetti tomorrow so no prep necessary.
