Chicken Marsala

What am I having for dinner?
Chicken Marsala
Potato
Broccoli


Ingredients
4 chicken breasts (boneless, skinless, halves)
3 tablespoons olive oil - divided
8 ounces mushrooms - sliced
1 1/2 cups sliced onion
3/4 cup white wine (I use cooking)
1 tablespoon balsamic vinegar
1 teaspoon parsley


Directions

  1. Heat 1 tablespoon of the olive oil in a large skillet over high heat until hot; add chicken.
  2. Cook 2 to 3 minutes each side, remove from skillet and keep warm.
  3. Add remaining oil, mushrooms and onions to skillet; cook and stir 5 minutes.
  4. Reduce heat to low; add wine, vinegar and simmer uncovered 2 minutes.
  5. Return cutlets to skillet, coat with sauce and cook covered until chicken is cooked through.
  6. Sprinkle with parsley right before moving to plate.

Prep for tomorrow, tonight: We are having BBQ NY Strip tomorrow. Pull your steaks out of the freezer. This steak needs to be marinated a minimum of 2 hours. I put mine in the marinate frozen tonight. (Marinate to be posted later today.)
