Chicken with Basil Cream Sauce

What am I having for dinner?
Chicken with Basil Cream Sauce
Broccoli
Rolls

Ingredients
1/4 cup milk
1/4 cup dry bread crumbs
4 boneless skinless chicken breasts
3 tablespoons butter
1 tablespoon Olive Oil
1/2 cup chicken broth
1 cup heavy whipping cream
1/2 cup grated Parmesan cheese
1 teaspoon basil
1/8 teaspoon pepper
1 teaspoon cornstarch

Directions

  1. Preheat oven to 350 degrees.
  2. Place milk and bread crumbs in separate shallow bowls.
  3. Dip chicken in milk, then coat with bread crumbs.
  4. In skillet over medium heat, brown chicken on both sides in butter and olive oil.
  5. Remove and place in preheated oven to cook through.
  6. Add all but 1/4 cup chicken broth to skillet.
  7. Bring to a boil over medium heat and stir to loosen browned bits from pan bottom.
  8. Stir in whipping cream bring to boil stirring for 1 minute before reducing heat.
  9. Stir in Parmesan, basil and pepper and cook until heated through.
  10. Mix cornstarch with extra chicken broth and stir into skillet to thicken sauce.
  11. Serve chicken with sauce poured over it.
