Onion, Mushroom, Swiss Turkey Burger

What am I having for dinner tonight?
Onion, Mushroom, Swiss Turkey Burger
Fries
Corn

Ingredients
2 tablespoons Olive Oil
1 large onion, sliced
salt and pepper to taste
1/2 pound button mushrooms, thinly sliced
2 teaspoon all purpose flour
1/4 cup dry white wine (or chicken broth)
3/4 cup chicken broth
1 pound ground turkey breast
1/3 pound block of Swiss cheese, cut into 1/4 inch cubes
2 teaspoons poultry seasoning
1/4 teaspoon cayenne pepper
8 slices wheat bread toasted

Directions

  1. Preheat a large skillet over medium-high heat with the 2 tablespoons of olive oil.
  2. Add the onions and season them with a little salt and pepper.
  3. Cover them and cook for 5 minutes.
  4. Add the mushrooms and cook for another 5 minutes, stirring occasionally.
  5. Uncover the pan and let the juices cook off a little.
  6. Sprinkle the mixture with the flour.
  7. Cook for 1 minute, add the wine then the chicken broth, and cook until nice and thick, 2 minutes.
  8. Combine the ground turkey, Swiss cheese, salt and pepper, poultry seasoning and cayenne pepper in a medium bowl.
  9. Form the mixture into 4 large patties no more than 1 inch thick.
  10. Drizzle the patties with olive oil.
  11. Preheat a large nonstick skillet over medium-high heat.
  12. Add patties and cook them for 5 to 6 minutes on each side, or until the turkey is cooked through.
  13. Serve the turkey burgers on toasted wheat bread, smother with onions and mushrooms.
