Crock Pot Chicken Stew

What am I having for dinner?
Crock Pot Chicken Stew
Mashed Potatoes

Ingredients
6 boneless chicken breast halves
2 onions - thinly sliced
2 cups apple cider
1 can chicken broth
1 package baby carrots - 16 oz
1/2 teaspoon rosemary - crushed
salt and pepper to taste

Directions

  1. In a crock pot place carrots on the bottom first, then onions.
  2. Layer chicken on top, salt and pepper to taste and crush the rosemary over the top as well.
  3. Add cider and broth.
  4. Turn crock pot on low and cook for 8 hours.
  5. When carrots are tender and all is cooked, drain cooking liquid into a sauce pan and simmer over medium heat till reduced.
  6. In a cup, add 1 teaspoon flour and 1/4 cup cold water and blend to make a paste, using a fork. (Make sure there are no lumps.)
  7. Add flour mixture to simmering cooking juices, blending the entire time.
  8. When sauce has thickened, serve over chicken.
