One-Pot Pasta with Italian Chicken
Ingredients
1 pound skinless, boneless chicken breast halves
2 teaspoons olive oil
1 large onion, chopped
8 ounces sliced mushrooms
1 clove garlic, minced
1 teaspoon Italian seasoning
1/2 cup white wine
1 can Italian-style stewed tomatoes
1 can chicken broth
8 ounces elbow macaroni
salt to taste
Directions
- Heat oil in skillet over medium heat.
- Add chopped onion, mushroom, and garlic to skillet and cook until tender.
- Cut chicken into bite sided pieces and add to skillet along with Italian seasoning.
- Cook, stirring frequently, for 3 minutes.
- Add the wine and cook, stirring constantly, for 1 minute.
- Add the tomatoes with their juice, the broth, 1/2 cup water, and pasta.
- Bring the mixture to a boil and press the pasta down into the liquid.
- Cover the skillet and cook at a moderate boil until the pasta is tender and the chicken is no longer pink in the center, 7 to 9 minutes.
- Season with salt.
