One-Pot Pasta with Italian Chicken

What am I having for dinner tonight?
One-Pot Pasta with Italian Chicken

Ingredients
1 pound skinless, boneless chicken breast halves
2 teaspoons olive oil
1 large onion, chopped
8 ounces sliced mushrooms
1 clove garlic, minced
1 teaspoon Italian seasoning
1/2 cup white wine
1 can Italian-style stewed tomatoes
1 can chicken broth
8 ounces elbow macaroni
salt to taste

Directions

  1. Heat oil in skillet over medium heat.
  2. Add chopped onion, mushroom, and garlic to skillet and cook until tender.
  3. Cut chicken into bite sided pieces and add to skillet along with Italian seasoning.
  4. Cook, stirring frequently, for 3 minutes.
  5. Add the wine and cook, stirring constantly, for 1 minute.
  6. Add the tomatoes with their juice, the broth, 1/2 cup water, and pasta.
  7. Bring the mixture to a boil and press the pasta down into the liquid.
  8. Cover the skillet and cook at a moderate boil until the pasta is tender and the chicken is no longer pink in the center, 7 to 9 minutes.
  9. Season with salt.
