Cream of Broccoli Soup

What am I having for dinner tonight?
Cream of Broccoli Soup
Rolls
Salad


Ingredients
2 tablespoons margarine
1 onion, chopped
1 stalk celery, chopped
3 cups chicken broth
8 cups broccoli florets
3 tablespoons margarine
3 tablespoons all-purpose flour
2 cups milk
ground black pepper to taste


Directions

  1. Melt 2 tablespoons butter in medium sized stock pot, and saute onion and celery until tender.
  2. Add broccoli and broth, cover and simmer for 10 minutes.
  3. Puree soup and return to heat.
  4. In small saucepan, over medium-heat melt 3 tablespoons butter, stir in flour and add milk.
  5. Stir until thick and bubbly, and add to soup.
  6. Season with pepper and serve.

Prep for tomorrow, tonight: We are having chicken enchiladas. This calls for two cups of chopped cooked chicken. If you have time tonight cook the chicken to make tomorrow easier. If not, be sure to at least pull any frozen chicken out of the refrigerator. You can pop it into a crock pot in the morning to cook it if you like.
