Turkey and Bean Thick and Hearty Soup

What am I having for dinner tonight?
Turkey and Bean Thick and Hearty Soup

Rolls

Ingredients
2 tablespoons vegetable oil
1 large onion - chopped
2 cups cubed peeled sweet potato
5 cups chicken broth or vegetable broth
1/2 teaspoon dried thyme leaves
1 16 ounce can Great Northern Beans - drained
2 cups turkey meat, chopped
2 cups cut fresh spinach leaves, coarsely chopped

Directions

  1. Heat oil in large saucepan or dutch oven over medium heat.
  2. Add onion and cook for 5 minutes.
  3. Add Sweet potato, broth and thyme.
  4. Bring to a boil.
  5. Reduce heat, and cover and simmer 10 minutes. (Sweet potato should be almost tender.)
  6. Add the beans and turkey; continue heating until hot enough to serve, about 10 minutes.
  7. Stir in spinach just before serving, salt and pepper to taste.
