What am I having for dinner tonight?
Turkey and Bean Thick and Hearty Soup

Ingredients
2 tablespoons vegetable oil
1 large onion - chopped
2 cups cubed peeled sweet potato
5 cups chicken broth or vegetable broth
1/2 teaspoon dried thyme leaves
1 16 ounce can Great Northern Beans - drained
2 cups turkey meat, chopped
2 cups cut fresh spinach leaves, coarsely chopped
Directions
- Heat oil in large saucepan or dutch oven over medium heat.
- Add onion and cook for 5 minutes.
- Add Sweet potato, broth and thyme.
- Bring to a boil.
- Reduce heat, and cover and simmer 10 minutes. (Sweet potato should be almost tender.)
- Add the beans and turkey; continue heating until hot enough to serve, about 10 minutes.
- Stir in spinach just before serving, salt and pepper to taste.
