Carrie's Chili
Ingredients
1 tablespoon vegetable oil
1 onion, chopped
2 cloves garlic, minced
1 pound ground beef
2 tablespoons Worcestershire Sauce
2 cans kidney beans, rinsed
1 can diced tomatoes
1 1/2 cup ketchup
3 tablespoons Chili Powder
2 tablespoons sugar
1/2 cup to 1 cup rolled oats
Directions
- Heat oil in large stock pot on medium heat
- Add onion and garlic, cook until transparent.
- Add ground beef and 2 tablespoons Worcestershire sauce.
- Brown beef, stir often to break beef up into small pieces. (You may want to increase temperature to medium-high.)
- Add 2 cans of rinsed kidney beans, 1 can diced tomatoes, 1 1/2 cans water (I use the water to rinse out the tomatoes to get any extra juices.), ketchup, and chili powder.
- Bring to a boil and reduce heat to simmer for 10 minutes.
- Add 2 tablespoons sugar and 1/2 cup to 1 cup of oats. (I add the oats because I like a nice thick chili and often can't wait for it to thicken over time. It adds some healthy fiber and no one will notice.)
- Simmer for about another 10 minutes. It is ready when the beans are cooked through.
