Banana Bread

I had a couple of bananas that were a little too ripe for my tastes so I whipped up some banana bread.





Ingredients
2 Large Eggs
1/3 cup Butter (softened)
1 ounce milk
2 Bananas, medium, mashed
1 1/3 cups bread flour (or all purpose flour)
2/3 cup Sugar
1 1/4 teaspoons Baking Powder
1/2 teaspoon Baking Soda
1/2 teaspoon Salt
1/2 cup Chopped Nuts (optional)

Directions

  1. Mix all wet ingredients in a large bowl.
  2. Mix all dry ingredients in a medium sized bowl.
  3. Mix dry ingredients into wet ingredients slowly.
  4. Pour into lightly greased, I used Pam on mine, loaf pan.
  5. Preheat oven to 350 degrees. (I use this time to let the batter rest before cooking.)
  6. Bake in oven for about 40 minutes. (After 30 minutes I cover with aluminum foil to prevent over browning.) Check with toothpick to make sure it is done.
