I had a couple of bananas that were a little too ripe for my tastes so I whipped up some banana bread.
Ingredients
2 Large Eggs
1/3 cup Butter (softened)
1 ounce milk
2 Bananas, medium, mashed
1 1/3 cups bread flour (or all purpose flour)
2/3 cup Sugar
1 1/4 teaspoons Baking Powder
1/2 teaspoon Baking Soda
1/2 teaspoon Salt
1/2 cup Chopped Nuts (optional)
Directions
- Mix all wet ingredients in a large bowl.
- Mix all dry ingredients in a medium sized bowl.
- Mix dry ingredients into wet ingredients slowly.
- Pour into lightly greased, I used Pam on mine, loaf pan.
- Preheat oven to 350 degrees. (I use this time to let the batter rest before cooking.)
- Bake in oven for about 40 minutes. (After 30 minutes I cover with aluminum foil to prevent over browning.) Check with toothpick to make sure it is done.
