Ingredients
1 egg
3/4 cup water
3/4 cup uncooked old-fashioned or quick cooking oats
1 1/2 pounds extra-lean ground beef
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1/2 cup chopped onion
1 tablespoon Dijon Mustard
1 teaspoon dried thyme leaves, crumbled
1 teaspoon salt
1/2 teaspoon ground black pepper
Directions
- Heat the oven to 350 degrees.
- In a large bowl, mix the egg, water, and oats.
- Let stand for 5 minutes
- Add the remaining ingredients and mix with your hands or an electric mixer on low speed just until blended.
- Press the mixture into a 9x5-inch loaf pan.
- Bake for 50 to 60 minutes, or until the juices run clear or a meat thermometer inserted into the center registers 170 degrees.
- Remove the pan from the oven, cover loosely with foil, and let stand for 10 minutes.
- Drain off any juices before slicing and serving.

Freezer Friendly - Put the loaf pan in a freezer safe bag before cooking. Put in refrigerator the day before cooking to defrost and bake as instructed.
