Spinach and Oats Meat Loaf

Ingredients
1 egg
3/4 cup water
3/4 cup uncooked old-fashioned or quick cooking oats
1 1/2 pounds extra-lean ground beef
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1/2 cup chopped onion
1 tablespoon Dijon Mustard
1 teaspoon dried thyme leaves, crumbled
1 teaspoon salt
1/2 teaspoon ground black pepper

Directions

  1. Heat the oven to 350 degrees.
  2. In a large bowl, mix the egg, water, and oats.
  3. Let stand for 5 minutes
  4. Add the remaining ingredients and mix with your hands or an electric mixer on low speed just until blended.
  5. Press the mixture into a 9x5-inch loaf pan.
  6. Bake for 50 to 60 minutes, or until the juices run clear or a meat thermometer inserted into the center registers 170 degrees.
  7. Remove the pan from the oven, cover loosely with foil, and let stand for 10 minutes.
  8. Drain off any juices before slicing and serving.

Freezer Friendly - Put the loaf pan in a freezer safe bag before cooking. Put in refrigerator the day before cooking to defrost and bake as instructed.
