Crock Pot Garlic-Rosemary Chicken Breast

Ingredients
1 1/2 lbs boneless skinless chicken breasts
5 minced garlic cloves
1/2 cup butter
1/2 cup chicken broth
1 tablespoon rosemary
salt
pepper
parsley flakes

Directions

  1. Place butter and garlic in microwave-safe bowl and heat until butter is soft; blend together.
  2. Roll chicken breasts in garlic-butter mixture and place in crock pot; reserve remaining.
  3. Sprinkle chicken breasts with salt, pepper, parsley and rosemary.
  4. Add broth to bowl with remaining garlic-butter, reheat if necessary to allow smooth blending, and add mixture to crock pot.
  5. Cook on low setting for 5 - 6 hours or until juices run clear.
  6. Serve with a small amount of sauce.

How many chicken breasts did you use for this recipe?

It really depends on what size your chicken breasts are. I would use between 4 and 6 breasts.

I'm assuming you used fresh chicken breasts. If you are using frozen, do you recommend defrosting them first?

Cathy,

I wouldn't use frozen chicken unless you defrost it first. I have read that if you use frozen meats in your crock pot it takes so long for the temp. to reach safe levels that you risk bacteria growth.

But, if you don't have small children at home and you want to just throw frozen chicken in I would start the crock pot on high to start. This would help bring the temps up faster.
