Ingredients
3 tablespoons fresh lemon juice
1 tablespoon Olive Oil
2 cloves garlic
1 teaspoon coarse kosher salt
1 teaspoon chopped fresh thyme
1 teaspoon prepared mustard
1/4 teaspoon ground red pepper (cayenne)
1/2 teaspoon black pepper
4 - 6 boneless skinless chicken breasts
Directions
- Heat oven to 350 degrees.
- Place lemon juice, oil, garlic, salt, thyme, mustard, red pepper and black pepper in a food processor or blender.
- Process 15 seconds.
- Rub lemon juice mixture into skin.
- Place chicken on a rack in a 13x9x2 inch baking pan.
- Bake in heated 350 degree oven 45 minutes.
- Increase oven temperature to broil.
- Place chicken under broiler 2 to 3 minutes to crisp.
