Lemon-Thyme Chicken

Ingredients
3 tablespoons fresh lemon juice
1 tablespoon Olive Oil
2 cloves garlic
1 teaspoon coarse kosher salt
1 teaspoon chopped fresh thyme
1 teaspoon prepared mustard
1/4 teaspoon ground red pepper (cayenne)
1/2 teaspoon black pepper
4 - 6 boneless skinless chicken breasts

Directions

  1. Heat oven to 350 degrees.
  2. Place lemon juice, oil, garlic, salt, thyme, mustard, red pepper and black pepper in a food processor or blender.
  3. Process 15 seconds.
  4. Rub lemon juice mixture into skin.
  5. Place chicken on a rack in a 13x9x2 inch baking pan.
  6. Bake in heated 350 degree oven 45 minutes.
  7. Increase oven temperature to broil.
  8. Place chicken under broiler 2 to 3 minutes to crisp.
