Whole Oven-Barbecued Chicken

Ingredients
2 small lemons
1/2 cup Barbecue Sauce
1 teaspoon Italian seasoning
2 cloves garlic, peeled
1 whole chicken (3 pounds)

Directions

  1. Preheat oven to 350 degrees.
  2. Grate 1/2 teaspoon lemon peel; set aside.
  3. Cut lemons in half; squeeze juice into small bowl.
  4. Set aside lemon haves for later use.
  5. Add barbecue sauce and seasoning to the lemon juice; mix well.
  6. Place chicken in baking pan.
  7. Place 2 of the lemon halves and the garlic cloves inside the cavity of chicken.
  8. Rub skin of chicken with remaining 2 lemon halves and discard.
  9. Tie legs together with kitchen twine. (I sometimes use dental floss, just make sure it isn't flavored.)
  10. Bake 1 hour 45 minutes, or until chicken is cooked through, brushing with the barbecue sauce mixture every 5 minutes during the last 20 minutes of the baking time.
  11. Sprinkle with reserved lemon peel during the last 5 minutes.
  12. Remove and discard lemon halves and garlic cloves from chicken cavity.
  13. Skim fat from drippings in chicken baking pan; serve drippings with chicken.
