Ingredients
1 pound lean ground beef
1/4 cup flour
1 teaspoon chili powder
1/3 cup diced onion
4 cloves garlic, pressed
1/2 teaspoon salt
1/2 cup water
16 ounce an refried beans
10 flour tortillas (7-inch)
1 1/2 cups Taco sauce
1 1/2 cups grated cheddar cheese
Directions
- Brown the beef in a skillet.
- Remove from heat and drain.
- Return the meat to the skillet and add the flour, chili power, onion, garlic, and salt.
- Toss to mix the spices evenly.
- Add the water and stir over medium heat for 8-10 minutes or until smooth and creamy.
- In a separate pan warm the refried beans over low-medium heat for 2-3 minutes.
- Remove from heat.
- Place about 3 tablespoons of refried beans and 3 tablespoons of ground beef on each tortilla.
- Fold the tortilla sides in and over the beef, then flip the tortilla over so the folded side is down.
- Place it on a microwave safe plate.
- Cover each Enchilito with 2-3 tablespoons of taco sauce and 2 heaping tablespoons of cheese.
- Heat the dish in the microwave on high for 30 -40 seconds, or until the cheese melts.
- Repeat with the rest of the tortillas.
