Enchilito

Ingredients
1 pound lean ground beef
1/4 cup flour
1 teaspoon chili powder
1/3 cup diced onion
4 cloves garlic, pressed
1/2 teaspoon salt
1/2 cup water
16 ounce an refried beans
10 flour tortillas (7-inch)
1 1/2 cups Taco sauce
1 1/2 cups grated cheddar cheese

Directions

  1. Brown the beef in a skillet.
  2. Remove from heat and drain.
  3. Return the meat to the skillet and add the flour, chili power, onion, garlic, and salt.
  4. Toss to mix the spices evenly.
  5. Add the water and stir over medium heat for 8-10 minutes or until smooth and creamy.
  6. In a separate pan warm the refried beans over low-medium heat for 2-3 minutes.
  7. Remove from heat.
  8. Place about 3 tablespoons of refried beans and 3 tablespoons of ground beef on each tortilla.
  9. Fold the tortilla sides in and over the beef, then flip the tortilla over so the folded side is down.
  10. Place it on a microwave safe plate.
  11. Cover each Enchilito with 2-3 tablespoons of taco sauce and 2 heaping tablespoons of cheese.
  12. Heat the dish in the microwave on high for 30 -40 seconds, or until the cheese melts.
  13. Repeat with the rest of the tortillas.
