Blueberry Muffins

Here are the muffins that I make my husband every Monday morning.


Ingredients
2 cups flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
2 eggs
1 cup milk
3/4 cup sugar
1/2 cup vegetable oil
1 cup blueberries - frozen or fresh - thawed

Directions
  1. Preheat oven to 400 degrees
  2. In a large bowl combine flour, baking powder, cinnamon, salt and sugar; mix well.
  3. In a separate smaller bowl beat eggs lightly and stir in milk, and oil.
  4. Quickly stir egg mixture into dry ingredients.
  5. Carefully stir in blueberries
  6. Spoon mixture into greased muffin cups and bake for 15 to 17 minutes.
I have never tried to make this with other berries but I am sure that it would work with one of your favorites.
