Bruschetta Chicken Bake

Just had this last night.  It was great!  It was one of those recipes that I made because I hadn't planned anything.  It was on the back of a Stove Top Stuffing box and I had everything at hand to make it already.


Ingredients
1 can (14 1/2 oz) diced tomatoes, undrained
1 pkg (6 oz) Stuffing mix for chicken
2 cloves garlic, minced
1 1/2 pound boneless skinless chicken breasts, cut into bite-sized pieces
1 teaspoon dried basil leaves
1 cup Shredded mozzarella cheese

Directions
  1. Preheat oven to 400 degrees.
  2. Place tomatoes with their liquid in medium bowl.
  3. Add stuffing mix, 1/2 cup hot water and garlic; stir just until stuffing mix is moistened.
  4. Set aside
  5. Place chicken in 13X9-inch baking dish; sprinkle with the basil and cheese.
  6. Top with the stuffing mixture.
  7. Bake 30 minutes or until chicken is cooked through.

I've made this for my family several times and we all love it! I did add another 1/2 can tomatoes b/c it seemed a tad dry the first time I made it. I've got everything to make it again, but this time I've got some frozen, cooked, cubed grilled chicken that I'm going to try in it. Hope it turns out okay!

Jennifer, I hope your version of the recipe with the cooked chicken worked out. I was thinking that it would be a good recipe for doing just that. If you planned leftovers from some Italian seasoned chicken I bet it would taste great.

Great tip on adding more tomatoes. I don't remember thinking mine was dry, but I might have gone a little crazy with the cheese. I love cheese.
