Ravioli Lasagna

Ingredients

10 ounces frozen chopped spinach, thawed and squeezed dry
1 cup shredded mozzarella cheese
15 ounces carton ricotta cheese, divided
1 teaspoon Italian seasoning
1 egg slightly beaten
1/2 cup Parmesan cheese, shredded
1 jar (26 ounces) spaghetti sauce
1 package (25 ounces) frozen cheese ravioli

Directions
  1. Preheat oven to 400 degrees.
  2. Combine spinach, 1/2 cup mozzarella, ricotta cheese, Italian seasoning, egg and 1/2 cup Parmesan cheese.
  3. Spread marinara sauce on bottom of 9-inch baking pan.
  4. Arrange frozen ravioli in single layer on top.
  5. Top with cheese mixture, then ravioli again.
  6. Finally top with additional marinara.
  7. Top with 1/2 cup mozzarella cheese.
  8. Bake for 30 minutes.  (To help prevent any possible spilling into the bottom of your oven put a cookie sheet under the baking pan.)
  9. Let stand about 15 minutes to cool and set up.
Let me know what you think of this variation on lasagna.

I love this recipe it is quick and easy. I do mine in the crockpot. I love my crockpot and it makes my life easier. We call this recipe crockpot lasagna. Put some garlic bread and salad with this and you have a great meal.

I really enjoy your website and posts! Thanks for the tips!

OHVA Mom, Thanks for the idea of cooking this in the crockpot. The crockpot is my friend too. I try to include at least one crockpot meal in my weekly menu each week.

Thanks for visiting my website!

Hi Carrie,
I make this with just plain lasagna instead of the cheese ravioli, and use I omit the parmesan. I sometimes use chopped broccolli instead of spinach. It is really good this way as well. You don't have to cook the lasagna noodles in advance.
I love your website and looking forward to starting this week. It looks wonderful. What a gift you are giving to many of us. I have 3 year old special need triplets. This is a blessing for me. Glad I found this.s Thank you.

Shelley,

Thank you for the suggestion of using broccoli instead of spinach. It sounds good.

I also want to thank you for your kind words on the site. It is great to hear that it is helping others as I hoped that it would when I started it.
