Scalloped Corn

After the holidays my kitchen was a wreck.  After some deep cleaning, which included rearranging cabinet items, I found a small box with a few great recipes in it.  I will be posting them all over time.  (The box itself is going in the garage sale pile I have started, that is waiting for the spring.)  Here is one of the recipes, which is in my mom's handwriting so I am sure I got it from her.


Ingredients
1 stick melted butter
1 can cream style corn
1 can whole kernel corn
1 box (8oz) corn muffin mix
1 cup sour cream
2 beaten eggs

Directions
  1. Preheat oven to 350 degrees.
  2. Mix all ingredients together adding beaten eggs last (note from Mom saying "so they won't cook in melted butter")
  3. Pour into large size baking dish. (Translates into about a 13x9 pan)
  4. Bake for 45 minutes or until lightly browned
Come to my mom's family or my husband's family for a big potluck dinner and you will be sure to find someone has brought this wonderful dish.

Thanks Mom for the recipe.  I don't remember asking for it.  I am sure I did because Ted loves it and I didn't know how to make it.
