Applesauce Oatmeal Muffins

Ingredients

1 cup old fashion rolled oats
1 cup milk
1 cup whole wheat flour
1/2 cup brown sugar
1/2 cup unsweetened applesauce
1 egg
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon sugar
1/2 cup raisins or nuts (optional)

Directions

  1. Soak the oats in milk for about one hour. 
  2. Preheat the oven to 400 degrees.
  3. Spray muffin pan with cooking spray. 
  4. Combine the oat mixture with the applesauce and egg, and mix until combined. 
  5. In a separate bowl measure and whisk the dry ingredients together. 
  6. Add wet ingredients to dry and mix until just combined.
  7. Add nuts or raisins if desired. 
  8. Spoon muffin mixture into muffin pan. 
  9. Combine the cinnamon and sugar and top each muffin with some of the mixture. 
  10. Bake for 20-25 minutes or until done. 
  11. Remove from pan, cool and enjoy. 
These can be frozen and reheated in the microwave for a quick breakfast

Carrie - love the blog. I've got the oats soaking, but I've got a question. The recipe says 1 egg, but the directions only tell you what to do with the egg white. Can I use the whole egg? Or do I need to do something extra with the egg yolk?

Sorry about that. I modified a recipe that only used egg whites. Yes, use the whole egg. I will update the website with the correction.

BTW, if you only want to use egg whites use two egg whites.

Just had some with dinner. These were delicious. Kids thought they were great too. I used 1 whole egg. Next time I'm going to use raisins and try out my powdered eggs.

I am glad they turned out and that you and the kids liked them. I love mine with raisins. It is almost like eating an oatmeal raisin cookie.
