I thought it might be a good idea to give you a better idea what I do with leftovers. I have given you a few ideas in the past. (Check here.) But, I have been inspired by a friend at The New Frugal Mom to help you have planned meals from leftovers. So, here is my first attempt and it is an easy one.
First make Creole Gumbo Chicken with rice. Then for either a hearty lunch or add a salad and a roll for a great dinner and make Creole Gumbo Chicken Soup.
Ingredients
Rice
Chicken Broth
Directions
- Take your leftover Creole Gumbo Chicken and put into sauce pan.
- Add to the pan rice equal to a third of the total of the gumbo.
- Pour chicken broth over mixture until when mixed has the desired consistency.
- Heat soup over medium-high heat until warm.
You will find that no additional spices are needed. If you like you can freeze the leftover and have the soup later in the month.
