Dutch Apple Quick Bread

One evening last week I had the urge to bake.  So, I made this great quick bread.  The next morning we ate it for breakfast and had rave reviews.  I plan to make some more this week in small loaf pans so that I can freeze them for a quick yummy breakfast or snack.  It is also a great recipe because I easily had everything on hand that I needed to make it.


Ingredients
  • 1/2 cup butter or margarine, softened
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup milk (I used skim milk)
  • 1 cup chopped, peeled apple
  • TOPPING:
  • 1/3 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons butter or margarine
Directions
  1. In a mixing bowl, cream butter and sugar. 
  2. Beat in eggs and vanilla.
  3. Stir in milk. 
  4. Combine flour, baking soda and salt; stir into the creamed mixture.
  5. Fold in apples. 
  6. Pour into a greased 9-in. x 5-in. x 3-in. loaf pan. 
  7. For topping, combine the first four ingredients; cut in butter until crumbly. 
  8. Sprinkle over batter. 
  9. Bake at 350 degrees for 55-60 minutes. 
  10. Cool in pan 10 minutes before removing to a wire rack.
