BBQ Ground Beef Volcano

Ingredients

1 teaspoon vegetable oil
1 small onion chopped
1 small green bell pepper, chopped
1 pound ground beef
1 (14.5 oz) can diced tomatoes
1 cup BBQ sauce
Mashed potatoes
1/2 cup shredded cheddar cheese

Directions
  1. Heat vegetable oil in skillet.
  2. Add onion and green pepper and cook until just tender.
  3. Add ground beef, stirring often.
  4. Cook until no longer pink.
  5. Drain mixture.
  6. Add beef mixture, tomatoes and BBQ sauce.  
  7. Cook until liquids reduce by about half, about 15 minutes.
  8. Place a mound of mashed potatoes on plate and cover with meat.
  9. Top with cheese.
This is easy and tastes great.  Tell the kids it is a volcano and they will love it!
