Ingredients
1 pound ground beef
1 can (15 ounces) black beans, rinsed and drained
1 teaspoon vegetable oil
1/2 cup chopped onion
1/2 cup green bell pepper chopped
2 cloves garlic minced
1 cup salsa
8 flour tortilla (taco sized)
1/2 cup shredded lettuce (optional topping)
1/2 cup chopped tomato (optional topping)
1/2 cup sour cream (optional topping)
Directions
- Slightly mash half of the beans.
- Heat oil over medium high heat.
- Cook ground beef, onion, bell pepper and garlic in skillet about 5 minutes.
- Stir in all beans and salsa.
- Heat to boiling; reduce heat.
- Simmer uncovered 5 minutes.
- Spoon about 1/4 cup of meat and bean mixture into each tortilla.
- Top with lettuce, tomatoes and sour cream.
