Beef and Black Bean Soft Tacos

Ingredients

1 pound ground beef
1 can (15 ounces) black beans, rinsed and drained
1 teaspoon vegetable oil
1/2 cup chopped onion
1/2 cup green bell pepper chopped
2 cloves garlic minced
1 cup salsa
8 flour tortilla (taco sized)
1/2 cup shredded lettuce (optional topping)
1/2 cup chopped tomato (optional topping)
1/2 cup sour cream (optional topping)

Directions
  1. Slightly mash half of the beans.
  2. Heat oil over medium high heat.
  3. Cook ground beef, onion, bell pepper and garlic in skillet about 5 minutes.
  4. Stir in all beans and salsa.
  5. Heat to boiling; reduce heat.
  6. Simmer uncovered 5 minutes.
  7. Spoon about 1/4 cup of meat and bean mixture into each tortilla.
  8. Top with lettuce, tomatoes and sour cream.
