Chicken, especially chicken breasts, are a staple in our house.  We all like it.  It is also great for an inexpensive and healthy meal.  Whenever, I have my mother in law over for dinner and we have chicken, she always asks me how I have such moist and tender chicken breasts.  Follow these three tips and your chicken will turn out great too.

  1. Only season chicken with salt right before cooking it.  Salt immediately begins drawing out juices.  If the meat is allowed to stand too long the chicken might be dry, not as tender, and difficult to brown.
  2. Brown the chicken on medium high heat on one side before turning.  If the chicken sticks, cook it an extra minute or two before turning.  Sticking usually means it needs a little extra cooking time.  (For thick pieces, reduce the heat to medium to continue cooking through.)
  3. To check for doneness, press on the chicken breast with a fork.  The meat should feel slightly firm but still have a bit of spring to it.  When it's pierced, the juices should run clear and the meat should no longer be pink.
