Chocolate Covered Brownies

This recipe is for Tricia at Once A Month Mom and Andrea at Mommy Snacks.

Ingredients
1 (1 lb 3.5 oz) box Fudge brownie mix (and any ingredients box says you need to make brownies)
1 cup semi-sweet chocolate chips
1 can Chocolate fudge frosting
1 teaspoon vanilla

Directions
  1. Make brownies in 13x9 inch pan according to directions on box. (Important to not over cook.)
  2. Completely cool brownies.
  3. Cut brownies into about 1x1 inch size pieces.
  4. In a microwave safe container melt chocolate 1 minute at a time at 50% power.  (Stir between each minute.  Should take no more than 3 minutes.)
  5. Add frosting and vanilla; mixing well to combine.
  6. Place one brownie piece at a time on a fork and dip into chocolate.  (Allow for any excess chocolate to fall from brownie.)
  7. Place chocolate covered brownie on parchment paper or for a fancier look put in miniature muffin cups.
  8. Let cool until chocolate hardens.  (I often speed this process by putting them on a cookie sheet in the freezer.)
Note:

I find that when the chocolate is getting too thick I can throw in the microwave for another minute at 50% power.

These are freezer friendly.  Make a batch and pull a few out at a time or save a bunch for a special get together!  I give them out as presents at Christmas time because they are just that great!
