Cookies From A Cake Mix

I am baking today.  But, I am baking a cake for my mother-in-laws birthday today.  I would share that recipe but I am making it from a box.  So, I thought I would share my mom's 'famous' recipe for making cookies using cake mix.  I say famous because anyone that has them, loves all her creative combinations.

Ingredients
1 cake mix any brand or flavor
Oil
eggs
anything else that sounds good
flour (to thicken batter if needed)

Directions
  1. Add to the dry mix the oil and eggs called for on the box, but do not add any additional liquid, and mix well.
  2. Add anything else from candy, nuts or fruit to mixture.
  3. Add any flour that might be needed to thicken batter.  (Carrie's note:  I find the moist cookies come from nice thick batter.)
  4. Drop about 1 tablespoon full of the cookie batter on a cookie sheet sprayed with cooking spray.
  5. Bake one batch before you fill another cookie sheet to make sure the cookie isn't too moist, as it will spread too thin.
  6. Bake at 350 degrees for about 8 to 10 minutes.
  7. Cool on cooling rack.
My mom's favorite combinations
  • Chocolate Cake Mix -  add chocolate chips, pecans and peppermint flavoring.
  • White Cake Mix - add coconut and pineapple (must add flour to keep proper dough consistency.
  • Spice Cake Mix - add applesauce instead of oil.  Then add nuts.
  • Yellow Cake Mix - add chocolate chips or M&Ms.
  • Orange Cake Mix - add orange zest.
The great thing about these cookies is that they are super easy, moist and you can create some great combinations of your own.

This is my favorite way to make cookies. I just made some using Strawberry cake, with strawberry slices and chocolate chips. MMMMmmmm. Haven't ever tried adding flour to the runnier mixes. Thanks for the tip!

Hi,
This is my first time visiting your site. Can you tell me how much oil and eggs to add to the cake mix to make cookies? Sounds really yummy.

Diane,

Regarding the amount of oil and egg would be the amount that is on the box to make the cake.

For example I have a cake mix that says to make a cake I would add to the mix 1/2 cup of oil, 3 large eggs and 1 1/3 cups water. So, with this cake mix I would add in 1/2 cup of oil and 3 large eggs only to make cookies.

I hope that makes sense.
