Cranberry Thyme Chicken

Ingredients

4 chicken breasts, boneless and skinless
1 cup chicken broth
1/2 cup dried cranberries
1 teaspoon thyme
Pepper to taste

Directions
  1. Heat chicken broth, cranberries, thyme and pepper in a large skillet over medium high heat.
  2. Reduce heat to simmer.
  3. Add chicken breasts and cover.
  4. Cook for about 15 minutes or until done turning once.
This super easy dish is moist and sweet.  I'll have mine with mashed potatoes (from my freezer) and peas.
