Ingredients
4 chicken breasts, boneless and skinless
1 cup chicken broth
1/2 cup dried cranberries
1 teaspoon thyme
Pepper to taste
Directions
- Heat chicken broth, cranberries, thyme and pepper in a large skillet over medium high heat.
- Reduce heat to simmer.
- Add chicken breasts and cover.
- Cook for about 15 minutes or until done turning once.
This super easy dish is moist and sweet. I'll have mine with mashed potatoes (from my freezer) and peas.
