Yummy Barley as Side

I had (and still have because a little goes a long way) some dry barley left in my pantry from a Beef and Barley stew I made.  It has been sitting in the pantry for some time.  Well I decided to try it as a side.  Everyone in the family loved it. (Everyone had more than one helping.)  I am going to add it to my side dish rotation.  


Ingredients
1 tablespoon Olive Oil
1 cup medium pearl barley
1/2 cup chopped onion
3 cups chicken broth
1 teaspoon dill, dried

Directions
  1. Heat oven to 400 degrees.
  2. In a 1 1/2 to 2 quart Dutch oven, heat the oil over medium heat.
  3. Stir in the barley and onion.
  4. Cook, stirring occasionally for 5 minutes or until the barley is lightly browned.
  5. Add the broth and dill, bring to a boil.
  6. Remove from stove top and cover.
  7. Place in oven and bake for 40 minutes or until barley is tender.
  8. Fluff barley with a fork before serving.
