Lemon and Garlic Linquine

Ingredients

16 oz linguine
1/2 cup olive oil
6 cloves garlic
3 tablespoons lemon juice
1/4 teaspoon freshly ground black pepper
1/2 cup grated Parmesan cheese
2 tablespoons parsley

Directions
  1. Cook pasta according to package directions
  2. Drain pasta and place in a serving bowl.
  3. Heat olive oil in skillet over medium-high heat.
  4. Add garlic and cook until golden, about 2 minutes.
  5. Add lemon juice and pepper.
  6. Reduce heat and simmer 1 minute.
  7. Add sauce to drained pasta and toss well.
  8. Add cheese and parsley and toss again.

I'm gonna try this with sauteed mushrooms and chicken breast. Will let you know how it turns out.

Wonderful and light. RB and I loved it. The sauteed portabellini mushrooms and chicken just went perfect with it
