Pork and Zucchini Kabob


Ingredients
1 pound pork loin cubed
1/4 cup teriyaki sauce
1 tablespoon lemon juice
1 tablespoon soy sauce
1 large zucchini cubed
1 tablespoon olive oil
Salt and Pepper to taste


Directions
  1. Mix teriyaki sauce, lemon juice and soy sauce in a bowl.
  2. Mix in cubed pork and let marinade for at least 30 minutes.
  3. In a separate bowl drizzle olive oil over zucchini and stir to coat.
  4. Sprinkle salt and pepper over zucchini while stirring.
  5. Alternate pork and zucchini on skewers.
  6. Grill for 5 to 6 minutes on each side until done.
