Homemade Pumpkin Soft Pretzels

The pretzels on the left are the pumpkin and the right the regular. (Made them for DH who has job interview today.)

1/2 cup Pumpkin Puree
1/4 cup water
1/4 teaspoon salt
2 cups Flour
1/2 teaspoon sugar
1/2 teaspoon Pumpkin Pie Spice
1 1/2 teaspoons Active Dry Yeast
1 egg, beaten
Coarse salt to taste

  1. Measure all ingredients into mixer, except egg and coarse salt.
  2. Mix until forms into a ball. (I use a stand mixer with dough hook.)
  3. Cover and place in warm place to double in size.
  4. Divide dough into four equal pieces and roll each into a rope.
  5. Form into pretzel shape and place on a greased cookie sheet.
  6. Brush each pretzel with beaten egg and sprinkle with coarse salt.
  7. Bake in preheated oven at 450 degrees for 12 to 15 minutes.
If you don't have a stand mixer only use 1 1/2 cups flour and stir with a spoon until mixed well. Then add remaining flour and knead by hand until forms into a smooth ball.

I ate one right out of the oven and the rest all calling my name. I thought of making a sweet topping instead of a salty one, but the salty really works.

To make the plain ones how do you adjust the recipe?

Carrie said...

The recipe for plain soft pretzels calls for 3/4 cup water and no pumpkin puree or pumpkin pie spice.

Have you tried these with whole wheat flour? Just wondering...I'm going to try it this soon. Yummy. I LOVE soft pretzels. And really love sweet/salt things.
