Catalina Blueberry Chicken

Ingredients
2 cups blueberries (I used frozen, defrosted)
1/2 cup Catalina salad dressing
1 tablespoon Italian seasoning
1 pound boneless skinless chicken breasts

Directions
  • I started with 2 cups frozen blueberries
  • Use a potato masher to mash the blueberries.
  • Add Catalina dressing and spices and stir well.
  • Add chicken to baking pan and cover with mixture.
  • Bake at 350 degrees for 50 minutes. (I used a spoon to baste the chickens about half way through.)

I would be curious to know how this tastes. Looks interesting. Also, what did you serve with this?

It was very good. Sweeter than I expected. The chicken was very tender. My son, age 2, loved it. He at all of his and some of mine.

I had a small green salad, steamed corn, and some left over buttered french bread with the chicken.
