Chili Cheddar Potato Soup


Ingredients

2 teaspoons olive oil
1 medium onion, chopped
3 cloves garlic, minced
1Tablespoon chili powder
1/2 teaspoon oregano
3 cups diced potatoes
2 cups water
1 teaspoon salt
1/4 teaspoon pepper
3 cups milk
1 1/2 cups shredded cheddar cheese

Directions
  1. In a large pot heat oil over medium high heat.
  2. Add onion, garlic, chili powder, oregano and stir until onion has softened.
  3. Add potatoes and water.
  4. Bring to a boil and then reduce heat to a simmer. Cover and simmer until potato has softened about 15 minutes.
  5. Add salt, pepper, and milk.
  6. Bring to a soft boil and add cheese.
  7. Reduce heat to a simmer and stir to blend in cheese.
  8. Serve warm.
You can top your soup with more shredded cheddar cheese, bacon, or sour cream.
